In 2004, the vineyard located in the Cognac region, boasting the controlled appellation Petite Champagne, implements meticulous practices in the reasoned cultivation of vines on typical limestone soil. Every stage of production, from harvest to bottling, is carried out rigorously to ensure the quality of the cognac.
The fermentation process is closely monitored to ensure optimal wine preservation, without the addition of SO2. Artisanal distillation, conducted with patience, is essential to create a quality product. Aging in French Limousin oak barrels in the estate's own cellars gives the cognac its distinctive characteristics.
During bottling, each bottle is handled with delicacy. The estate's cognacs are distinguished by their finesse, roundness, and subtle aromas of dried flowers, candied apricots, and licorice. On the palate, the perfect integration of wood offers a pleasant texture and exceptional length, complemented by a subtle pleasant rancio in the finish.
The estate invites you to celebrate the 20th anniversary of the union of Laurent and Elodie Vallet, representing the sixth generation at the helm of the business, by tasting this 2004 vintage. Each sip reveals a harmonious balance of floral and candied fruit notes. For an optimal tasting experience, it is suggested to pair this vintage with dried fruits or dark chocolate.
